Natalie Hoidal

Natalie Hoidal has been involved in gardening projects all her life and has recently become involved in seed saving, seed libraries and exploring weeds as food. She is currently researching amaranth at the University of Copenhagen as an alternative food crop for drought-prone areas.

Natalie holds a BA in biology and environmental studies from the University of Minnesota, Morris. Her research has previously focused on the ecological impacts of large-scale agriculture on Minnesota’s prairie ecosystems and how small-scale potato farmers in the Andean Altiplano are adapting to climate change.
