René Redzepi’s MAD Symposium, is part food festival, part culinary exploration fuelled by a devotion to food and a desire to understand it better. The MAD thinking is that new knowledge not only makes us more responsible, it can also make us more creative, providing fresh understanding and the tools to consider the cultural, historical, social and scientific context of our food. These symposiums host chefs and food activists from around the world and investigate the challenges and responsibilities of the modern chef and eater.
