Erik is a graduate of California Lutheran University where he studied Global Studies, German, and Asian Studies. He was introduced to the concept of sustainable food during his time there. This became a passion when he refocused his studies on urban food insecurity and policy advocacy.
Since then, Erik has lived in China and Laos, where he was able to observe the countries’ food systems in dialogue with economic strategy. He came back to his native Southern California with a goal of returning to Southeast Asia to research how rapid economic development affects food security and the environment. Erik is on Twitter and LinkedIn, and writes his own travel/food blog.
