      <h2>Report overview</h2>
<p>A transition away from farming systems that depend on chemical fertilisers and pesticides, to those which work with the land’s natural resources and biological processes, is urgently needed if we are to address climate change, restore biodiversity, improve public health and maintain food security. This transformation will be difficult, if not impossible, without the integration of grazing livestock.</p>
<p>Our report, <em><strong>Grazing Livestock: It&#8217;s not the cow but the how</strong>,</em> explores the multiple benefits that grazing livestock could deliver as part of a UK food system transformation. Realising these benefits will require a shift away from the consumption of intensive livestock products, towards lower-input, pasture-based farming and diets that feature smaller amounts of high-quality meat and dairy.</p>

      <h3><b>Benefits of grazing livestock</b></h3>
<div class="accordions"><div class="accordions__accordion"><h3 class="accordions__accordion__heading">Mixed farming<i></i></h3><div class="accordions__accordion__content"><div class="accordions__accordion__content__text last-child-no-margin"><p>A nationwide transition to biologically based farming systems that do not rely on agrochemicals, would prioritise natural soil fertility building within crop rotations. Producing food from this process – which would also help to build carbon and break pest, weed and disease cycles – generally requires the use of grazing animals.</p>
</div></div></div><div class="accordions__accordion"><h3 class="accordions__accordion__heading">Carbon storage and sequestration<i></i></h3><div class="accordions__accordion__content"><div class="accordions__accordion__content__text last-child-no-margin"><p>Natural fertility building within crop rotations, alongside regenerative grazing practices and, where possible, the integration of trees, could sequester hugely significant amounts of carbon over the coming decades, helping to tackle our climate impact, whilst delivering a range of other benefits.</p>

A transition to pasture-based grazing systems that minimise the use of agrochemicals, reduce agricultural pollution and foster a greater diversity of habitats and species will be essential to achieving this.</p>
</div></div></div><div class="accordions__accordion"><h3 class="accordions__accordion__heading">Nutrition and food security<i></i></h3><div class="accordions__accordion__content"><div class="accordions__accordion__content__text last-child-no-margin"><p>Livestock that are primarily fed on grass could significantly contribute to the UK’s supply of protein, fats and several key micronutrients. Grazing animals reared largely or solely on grass, rather than on grains that could otherwise be used for human consumption, would help to relieve the pressure on the supply of plant crops, benefiting food security.</p>
</div></div></div><div class="accordions__accordion"><h3 class="accordions__accordion__heading">Society and culture<i></i></h3><div class="accordions__accordion__content"><div class="accordions__accordion__content__text last-child-no-margin"><p class="p1">Grazing livestock play a central role in the social and cultural life of many rural communities and help to maintain culturally cherished grassland landscapes. A shift to lower input, pasture-based systems across the UK could build on this in various ways, for instance, by creating livestock-related jobs in areas currently dominated by arable farming.</p>

      <h3><strong>Responding to climate concerns</strong></h3>
<p>Significant criticisms have been made around the climate impacts of grazing livestock, particularly with regards to land use footprint and greenhouse gas emissions (GHG). While these are both important issues, a more holistic approach to measuring climate impact, alongside a shift in farming practices and diets, reveals that grazing livestock can play a central role in a food system that works for the climate as well as nature and human health.</p>
<div class="accordions"><div class="accordions__accordion"><h3 class="accordions__accordion__heading">Land use footprint<i></i></h3><div class="accordions__accordion__content"><div class="accordions__accordion__content__text last-child-no-margin"><p>Grazing livestock are often seen as a barrier to woodland expansion, but there is significant potential for integration of trees and ruminants. The SFT’s <em><strong><a href="https://sustainablefoodtrust.org/our-work/feeding-britain/" target="_blank" rel="noopener">Feeding Britain</a></strong></em> report showed that it would be possible to adopt agroforestry across 10% of the UK’s grassland area and plant almost 1 million hectares of woodland, whilst maintaining grasslands and grazing animals as a key part of the UK food system.</p>
</div></div></div><div class="accordions__accordion"><h3 class="accordions__accordion__heading">GHG emissions<i></i></h3><div class="accordions__accordion__content"><div class="accordions__accordion__content__text last-child-no-margin"><p>Adopting a lower-input, pasture-based approach to rearing animals, and reducing the production of intensively farmed meat and dairy, could enable a major reduction in GHG emissions and sequester significant quantities of carbon. Fundamental to this will be understanding, measuring and communicating the climate impacts of grazing livestock in a more holistic manner and considering the issues from a whole food system perspective.</p>

<p style="text-align: left;">A UK-wide transition to sustainable and regenerative farming practices, to tackle the climate, nature and public health crises, could produce enough food to maintain and potentially even improve current levels of self-sufficiency, provided we ate differently, ate less and cut food waste.</p>
<p style="text-align: left;">These are the key conclusions of our report, <em>Feeding Britain from the Ground Up</em>, which explores the potential impacts on land use, food production and individual diets of a UK-wide transition to sustainable farming based on biological principles.</p>

<h3>Impacts on food production</h3>
<p dir="ltr">If the UK were to switch to sustainable farming methods:</p>
<ul>
<li dir="ltr" role="presentation">We would produce double the amount of <strong>fruit and vegetables</strong>.</li>
<li dir="ltr" role="presentation"><strong>Grain</strong> production would halve due to a phase out of chemical inputs and less land being used for intensive crop production.</li>
<li dir="ltr" role="presentation">Much less grain would be fed to livestock and <strong>intensive livestock</strong> production would be phased out, resulting in a 75% decline in pork and chicken production.</li>
<li dir="ltr" role="presentation">We would produce double the amount of<strong> pulses</strong> (peas and beans).</li>
<li dir="ltr" role="presentation"><strong>Beef and lamb</strong>, reared mainly on grass, would continue to be produced at similar quantities as today and would become our staple meat.</li>

      <h3>Impacts on land use</h3>
<ul>
<li><strong>Mixed farming:</strong> There would be a general shift to mixed farming, resulting in the reintroduction of grassland and grazing livestock in arable areas (mainly in the south and east) and cropping in some areas which are currently dominated by grassland in the north and west of Britain.</li>
<li><strong>More land for trees and nature:</strong> We assumed that woodland cover would increase by close to a million hectares, and many more trees would be integrated into the farmed landscape through agroforestry. There would also be more land for nature, complementing the improvements to farmland biodiversity enabled by the shift to biologically based farming.</li>
</ul>

      <h3>Impacts on diets and self-sufficiency</h3>
<p style="text-align: left;">Our modelling suggests that a nationwide shift to sustainable farming would result in an increased availability of seasonal vegetables, fruit and pulses; slightly less beef and lamb and about a third less dairy, produced from high-welfare, mainly pasture-based systems; significantly less chicken, eggs and pork – with the remaining produce coming from free-range systems with high standards of welfare; and roughly the same amount of grain-based foods, but from a greater variety of cereals including more oats and rye.</p>
<p style="text-align: left;">By aligning our diets to what the UK could sustainably produce and eating according to the recommended intake of calories and key nutrients, we would be able to maintain or potentially even improve on current levels of self-sufficiency.</p>

      <h2>Abattoir Users Survey</h2>
<p>Our latest Abattoir Users Survey was carried out between 5<sup>th </sup>March and 25<sup>th </sup>March 2025. The survey was carried out by the Sustainable Food Trust, Soil Association and Rare Breeds Survival Trust, with input from the Abattoir Sector Group, including National Craft Butchers and Pasture for Life.</p>
<p>The creation of this survey followed the Food Standards Agency’s (FSA) call for evidence and subsequent discussions regarding the maintenance of the small abattoir discount on meat inspection charges. The results of this survey were presented to the FSA in April 2025. In June, <a href="https://sustainablefoodtrust.org/press-releases/fsa-recommends-retaining-the-small-abattoir-discount/">the FSA acknowledged the importance of the small abattoir sector </a>and the need for the discount to be maintained to ensure the survival of these businesses.</p>
<p style="font-weight: 400;">The survey received 850 responses from farmers and land managers right across the UK. It highlighted the crucial importance of a diverse network of abattoir services for the viability of many farming businesses.</p>
<ul>

<div>58% of respondents believed their business would not be profitable without selling direct to consumers or through local markets &#8211; a model which depends heavily on private kill and further processing services offered by small and local abattoirs.</div>
</li>
<li>
<p style="font-weight: 400;">If access to a local abattoir improved, 27% said they could sell meat locally and 10% could employ more staff.</p>
</li>
<li>77% of respondents keep native breeds, including 37 breeds listed as ‘Priority’ or ‘At Risk’ by the Rare Breeds Survival Trust</li>

      <h2>A Good Life and A Good Death</h2>
<p class="selectionShareable">The Sustainable Food Trust 2018 report, <em>A Good Life and A Good Death: Relocalising Farm Animal Slaughter</em> found that the UK’s network of small local abattoirs is near collapse. The report sets out the reasons for these closures and states that, without urgent action, there will be a huge loss of consumer choice because the marketing of locally-produced, traceable meat will no longer be possible in many parts of the country.</p>
<p class="selectionShareable">The SFT called on the Government to:</p>
<ul>
<li class="selectionShareable">Make a clear statement of support that it recognises the vital importance of smaller abattoirs, and make this a matter of practical policy across all government departments and agencies;</li>
<li class="selectionShareable">Work constructively with interested parties to make possible the use of mobile and small static red meat abattoirs for on-farm slaughtering;</li>
<li class="selectionShareable">Set up a task force with joint government, industry and consumer representation, to establish why small abattoirs are closing and propose innovative and practical solutions to ensure their survival.</li>
</ul>

      <blockquote><p>Local abattoirs play a vital role in all rural communities where farm animals are kept. When they close, both animals and meat have to be transported much further. This is bad for animal welfare and bad for the environment. It also threatens the ongoing renaissance of local food cultures. On my own organic farm, I have had to change abattoirs nine times over the last 30 years in order to keep our farm shop supplied with the meat from our own animals, as seven of those closest to me have closed and two became unsuitable for other reasons. I now have to take our animals almost 40 miles to get them slaughtered and it costs a great deal to get the carcases delivered back to our shop.</p></blockquote>

      <h2>Abattoir Sector Group</h2>
<p style="text-align: left;">Our Campaign for Local Abattoirs began in 2018 with National Craft Butchers and support from other organisations including the Rare Breeds Survival Trust and Pasture for Life. This contributed to an inquiry undertaken by the All-Party Parliamentary Group for Animal Welfare whose 2020 report recommended the creation of an Abattoir Sector Group (ASG). We co-founded the ASG later that year and work closely with the other members of the steering group to provide a unified voice for the small and local abattoir sector, advising government on behalf of the industry.</p>

                                    <p class="videos-grid__video__text">This film by Alexandra Genova tells the story of William Lloyd Williams, a charismatic Welshman who battled to keep his local meat purveyor business open for 40 years. Williams reared animals, slaughtered them and sold them in the butchers shop in Machynlleth, mid-Wales. Sadly, his business has since closed.<br />
<br />
This film is a rare documentation of independent meat production through the eyes of a cattleman-cum-slaughterman, at one of the most crucial times in UK farming history.</p>
